Italian Chicken and Potatoes

Italian Chicken and Potatoes

INGREDIENTS:
• 1-1/2 lbs. boneless, skinless chicken breasts
• 1/2 cup zesty Italian salad dressing
• 1/8 tsp. pepper
• 4 cloves garlic, minced
• 4 potatoes, cubed

PREPARATION:
Combine all ingredients in a 3-4 quart crockpot. Cover and cook on low for 6-8 hours until chicken is thoroughly cooked and potatoes are tender. Salt and Pepper to taste. Serves 4-6

Granola




The base of this recipe was given to me by a friend (I love her granola!) but needed to make it gluten friendly so modified it a little.

Mix together in large bowl:
9 cups instant oats (gluten-free: used Cream Hill Estates Oats)
1 cup wheat brand (didn't add for gluten-free)
2-3 cups almonds (I used 2 cups sliced)
1 cup craisins (optional)

Heat on stove:
3/4 cup oil
1 cup honey
1 TBS. vanilla

Once heated through pour on top of dry ingredients and mix well. Spread on two baking sheets and cook at 350 for 25-30 minutes. Cool and eat!

Candy Popcorn

This is my absolute favorite candy popcorn recipe that my sweet neighbor brought over. Luckily it's also super easy to make!

2 cubes butter
1 1/2 cup sugar
1/2 cup karro syrup

Bring above to a boil for 2 minutes or until turns light brown.

Add 1 tsp. vanilla

Pour over 2 1/2 bags popped popcorn and 3 cups mini marshmallows.

Stir about 5 minutes until marshmallows are melted and everything is coated.
