Cilantro Enchilada's and Basmati Rice

I normaly don't like cilantro but when a friend made me some yummy enchilada's I made an exception. These are so good, and fairly easy to make!

Cilantro Enchilada’s

Dice 3-4 Chicken breasts and cook with some garlic, salt, and pepper until browned.

Put in blender ½ of a 28 oz can of Las Palmas Medium Green Chili Enchilada Sauce (walmart), Head of of washed cilantro (just the leaves), a tsp. or so of garlic powder, and cup of sour cream. Blend. Pour some into a bowl with the cooked chicken and a can of cream of chicken soup (I make mine gluten free)and some shredded cheese. Mix. Add salt as needed.

Put some of the enchilada sauce in the bottom of the casserole dish. Put the chicken mixture in the tortillas (corn or flour), roll, and place in the casserole dish on the sauce. A trick to make the corn tortilla’s soft enough to roll and not tear is to put a stack in a open Ziploc bag and put in the microwave for about 30 seconds until soft. Repeat process till the dish if filled. Pour remaining enchilada sauce, and some of the cilantro sauce on the top of enchiladas. Will be very wet. Top with Cheese. Cook at 350 for 30 to 45 minutes at 350 degrees until bubbling.

**Tip: I had left over cilantro sauce that I added a little to some prepared ranch dressing. Tasted just like Cafe Rio ranch!

Basmati Rice

Put some oil in the bottom of pan, add a diced onion (very finely diced). Add 2 cups of rice (Basmati Rice is sold at Costco and Is gluten free) and cook for a minute or two. Add 4 cups of water and 2-4 TBS. Norrs Tomato chicken boullion spice (walmart) until it reached the desired taste. Once boiling taste the water for flavor as that is how the rice will taste and add more seasoning as needed. Cover and cook about 20 minutes until done.


Serve with fresh diced tomatoes, salad, and refried beans for a complete meal.

Italian Chicken and Potatoes

Italian Chicken and Potatoes

INGREDIENTS:
• 1-1/2 lbs. boneless, skinless chicken breasts
• 1/2 cup zesty Italian salad dressing
• 1/8 tsp. pepper
• 4 cloves garlic, minced
• 4 potatoes, cubed

PREPARATION:
Combine all ingredients in a 3-4 quart crockpot. Cover and cook on low for 6-8 hours until chicken is thoroughly cooked and potatoes are tender. Salt and Pepper to taste. Serves 4-6

Granola




The base of this recipe was given to me by a friend (I love her granola!) but needed to make it gluten friendly so modified it a little.

Mix together in large bowl:
9 cups instant oats (gluten-free: used Cream Hill Estates Oats)
1 cup wheat brand (didn't add for gluten-free)
2-3 cups almonds (I used 2 cups sliced)
1 cup craisins (optional)

Heat on stove:
3/4 cup oil
1 cup honey
1 TBS. vanilla

Once heated through pour on top of dry ingredients and mix well. Spread on two baking sheets and cook at 350 for 25-30 minutes. Cool and eat!

Candy Popcorn

This is my absolute favorite candy popcorn recipe that my sweet neighbor brought over. Luckily it's also super easy to make!

2 cubes butter
1 1/2 cup sugar
1/2 cup karro syrup

Bring above to a boil for 2 minutes or until turns light brown.

Add 1 tsp. vanilla

Pour over 2 1/2 bags popped popcorn and 3 cups mini marshmallows.

Stir about 5 minutes until marshmallows are melted and everything is coated.

Special Chocolate Cake

Devils Food Cake Mix
2 TBS. cocoa powder
1 cup sour cream
1/2 cup oil
1/2 cup water
3 eggs
1 tsp. vanilla

Mix and bake at 350 degrees for 30-40 minutes. Top with Chocolate Cream Cheese Frosting.

Chocolate Cream Cheese Frosting

1/4-1/2 cup cocoa
8 oz. cream cheese
1/2 cup butter
1 tsp. vanilla
2-4 cups powdered sugar

Mix until blended.

Puppy Chow

5 cups corn chex mix
2 cups honey nut cheerios
2 cups stick pretzels
2 cups christmas m&m's
1 pound vanilla flavored candy coating (I use the candy quick brand, super target sells it)

Mix all dry ingredients in a large bowl.
Heat up vanilla coating in microwave stir every 15 seconds until melted. Make sure you don't scorch it.
Pour over dry mixture while stirring gently.
Once mixture is evenly coated, spread out on wax paper to dry.
Once dry, break into pieces.

This definitely isn't a recipe that we eat around our house with a peanut allergy and gluten sensitivity, but I had this at a friends house and it was delicious so I had to share! Definitely a great party treat.
