Favorite Gluten and Dairy Free Products

My best advice for jumping into the Gluten Free World is to take your tried and true recipes that you know your family loves and substitute what you need to make it gluten free.  Finding all new GF recipes for me was expensive, overwhelming, and discouraging.  But making small modifications to recipes I already had and knew how to make was much easier.  :)

This blog contains a few of our families favorite recipes on this blog that I created mainly for traveling so I wouldn't need to take my recipes books with me.

These are a few of our favorite Gluten Free and Dairy Free products.  I'll add more as I think of them.  ;)  Feel free to email me at jesswilson78@gmail.com if you have any questions or need help converting a recipe.  I'd love to help!

Gluten Free (GF) Products

Udi's Bread - Small loaves are found in the frozen section of many health food stores but we've recently found regular size loafs at Costco.  They also have a ready made pizza crust that is very yummy and easy to use.   I buy at Walmart (freezer GF section).  

Trader Joes Sandwich Bread **edit: if you have a Trader Joes in your are the white sandwich bread is our new favorite! 

Cheese Pizza - I can't remember the Brand but this comes in a frozen pack of 3 cheese pizza and we add the toppings we want.  Costco freezer section

Tinkyada Noodles - Rice noodles that have a good texture similar to regular pasta.  Found at many stores in the GF section and on Amazon.com    I buy at Macey's

San-J Soy Sauce - This is our favorite GF soy sauce and we learned of it from PF Chang's.  They also have Teriyaki sauce found at most stores with a GF section.  La Choy soy sauce is also GF.  I buy at Macey's

Pamela's Baking Mix - This has been my go to flour/bisquick substitute for years for muffins, pancakes, waffles, cookies and more.  Their website has many recipes and some of our favorites are the biscuits, chocolate chip cookies and pancakes.  I buy this in bulk on Amazon.

Bob's Red Mill - 1 to 1 baking flour I buy at Walmart

Namaste Flour - I recently found this flour at Costco and it can be used to substitute for any baking recipe that requires flour.  I recently made a chocolate cake for my little boy and it turned out great!

Chex Cereal - Great GF cereal for breakfast.  Walmart has the best price but watch for Macey's to offer $1.67/box sales from time to time.  That's when I try to stock up.

Cheerios - We just found out that Cheerios now offers some great GF flavors!  We were in California so I haven't shopped around for them in Utah yet.

Malt o Meal Rice Krispies - My go to treat for our family is Rice Krispie treats made with coconut oil, instead of butter.  I was so excited that Malt O meal offers at certified GF rice krispie for a good price.  I buy this at Macey's

King Arthur Pancake Mix (Waffles too) - This is expensive at around $4.85/box but it is the best waffle mix that we have found and love. I buy this at Macey's

Annie's Gluten Free Mac and Cheese - We found the best deal on Amazon at $30 for 12 boxes, so you'll want to find a health store (or Winco in Utah!) that sells them to try first.  Great for food storage and my husband really loves this with hot dogs for a quick lunch.

Trader Joes - They have a really good GF bagel and sandwich bread!

Enjoy Life Products - Free of the most common allergens, Enjoy Life has Cookies, Granola Bars and more that are really good.  They are very pricey but if you shop around, and check online you may be able to find some deals.  Recently I've noticed these at Winco for much cheaper then other places with 1.50 off coupons on the products when you buy two.

Foster Farms GF Corndogs - Found at most grocery stores (I've found them at Winco and Albertson's).

Snyders GF Pretzels - I was pleasantly surprised to see Snyders has some gluten free pretzels that are very affordable - and in some different varieties (I love the honey mustard and onion)!  Sold at most grocery stores (I buy them at Macey's).  Perfect for little ones that can't have regular pretzels.  Just a trick I've found where I have some kids GF and some not is that I buy a different shape pretzel in the GF then the with Gluten.  So sticks for the gluten free, and standard pretzel shape for gluten.  Just helps me keep track.  Labeling snack bags helps too.

Harmans also has some great gluten free product (ready made soups, brownies, etc)

Coconut Crisp Rolls - Found at costco

Dairy Free Products

Earth Balance Butter - Walmart and other health food stores carry this butter.  An organic option is also available.

Almond or Coconut Milk 

Enjoy Life Chocolate Chips - These are the main chocolate chips we use all the time.  Can buy at Walmart or Macey's - but they are almost $2 cheaper a bag if you buy on Amazon 6 bags for $24.

Coco Whip - Coconut Whipped Cream.  Making your own is pretty easy too with recipes from the internet.  I found this in CA at Whole Foods.  Not sure where this is found in Utah.

Hagaan Daz Sorbet - Carried at most grocery store (I buy at Walmart or Macey's).  Small and a little pricey but we always have this on hand for those dairy free members of our family so they never feel left out with ice-cream for dessert.

EGG REPLACER

Egg Replacer:
1 egg = 2 TBS water, 1 TBS oil, 2 tsp baking powder


Chocolate Protein Balls

Ingredients:

1 cup gluten-free oats
3 TBS Chia Seeds
1 1/2 TBS Flax Seeds
1 1/2 TBS Sunflower Seeds
2 TBS Cocoa Powder
3/4 scoop vanilla protein powder
1 tsp cinnamon
1/4 tsp salt (or sea salt)
2/3 cup Nut Butter
2 tsp vanilla
3 TBS Honey

Mix all ingredients and scoop into balls.  Put in freezer to set.  I put in a ziploc bag and keep in the freezer.  Just pull one or two out when you need a quick pick me up.

Sweet and Sour Meatballs

Sweet and Sour Meatballs

1 lb. Lean Ground Turkey
1/4 cup rolled oats
2 eggs, slightly beaten
1/2 cup finely chopped onion
1/2 cup milk
1 tsp. salt
dash of pepper
1 tsp. worcestershire sauce

Combine all ingredients and mix well. Form into about 15 balls.  Place in casserole dish and cover with sauce (below).  Bake at 350 for ? minutes.

Sauce:
1 cup brown sugar
1/2 cup vinegar
2 tsp prepared mustard
1/2 cup barbecue sauce
2 tsp. worcestershire sauce

Combine ingredients and heat to pour over meatballs.

Banana Oat Muffins

Banana Oat Muffins

1 3/4 cups oat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup brown sugar
3 large over-ripe mashed bananas
1 egg
1 tsp vanilla
1/2 cup coconut oil (melted)
1/2 - 1 cup mini chocolate chips (I use enjoy life dairy free)

Mix the dry ingredients in a bowl.
Mix the wet ingredients in another bowl.
Combine wet and dry ingredients well.
Put in muffin tins 2/3 full.
Bake at 350 F for 30 minutes.

Chubby Cookies

Chubby Cookies

2 cups Almond Flour
1/4 tsp. baking soda
1/4 tsp salt
1/3 cup coconut oil (melted)
1/4 cup honey
1 Tbsp vanilla
1/4 cup dark chocolate chips (I use Enjoy Life dairy free)

Mix ingredients and spoon on cookie sheet.  Press down gently with spoon to flatten.  Having another cookie sheet on a separate rack under the cookies helps the bottom not brown too much. Bake at 350 degrees for 10 minutes.  Enjoy!

Sweet-n-Sour Meatballs

Meatballs:
1 lb. ground turkey
1/2 cup dry GF breadcrumbs
1/4 c. milk (I use almond milk)
2 Tbs. chipped onion
1 tsp. salt
1/2 tsp. worcestershire sauce
1 egg (I used egg replacer)

Mix ingredients; shape into twenty 1 1/2 inch balls.  Cook over medium heat, turning occasionally until brown (about 20 minutes)

Sauce:

1/2 c. brown sugar
1Tbs. cornstarch
1 can Pineapple chunks (I'd use tidbits next time)
1/3 cup vinegar
1 Tbs. soy sauce
1 small green pepper, coarsely chopped

Mix brown sugar and cornstarch in skillet.  Stir in pineapple (with Syrup - or half syrup half water if too sweet), ginger, and soy sauce.  Heat to boiling, stirring constantly; reduce heat.  Add meatballs.  Cover; simmer, stirring occasionally, 10 minutes.  Stir in green pepper.  Cover; simmer until crisp-tender, 5 minutes.  Serve with rice and veggies.

Healthy German Pancakes

1/2 oats blended into a flour
1/2 almond milk 
2 whole eggs
Dash of Cinnamon

Mix all together ingredients.  Spray a 9x13 pan with non stick cooking spray. Bake at 425 for 12-15 mins. I topped mine with raspberry jam but could use fresh fruit too.

Shepherd's Pie

1 lb. potatoes (russet)
Salt and Pepper
1/2 cup (or so) of Almond Milk
1 TBS Earth Balance Butter

1 TBS. Extra virgin olive oil
1 lb. ground turkey
2 carrots, peeled and chopped
1 onion, chopped
1 can corn
2 TBS. Earth Balance Butter
2 TBS. Gluten-Free flour (I used almond but it didn't thicken well)
1 cup gluten/dairy free beef stock or brother (I actually didn't have any and used chicken stock)
2 tsp. worcestershire sauce
1 cup frozen petite peas
2 TBS chopped fresh parsley leaves (I used parsley flakes)

Directions:

Boil potatoes in salted waters until tender, about 12 minutes.  Drain potatoes and add almond milk, butter and salt/pepper to taste and till creamy.  Add parsley

While potatoes boil, preheat a large skillet over medium high heat.  Add oil to hot pan with ground turkey.  Season meat with salt and pepper.  Brown and crumble meat for 3-4 minutes.  Add chopped carrot, can of corn, and onion to the meat.  Cook veggies with meat for 5 minutes, stirring frequently.  In a second small skillet over medium heat cook butter and flour together 2 minutes.  Whisk in broth and worcestershire sauce.  Thicken gravy 1 minute.  Add gravy to meat and vegetables.  Stir in peas

Preheat broiler to high.  Fill a 9x11 casserole dish with the meat mixture.  Spoon potatoes per meat evenly. Broil 6-8 inches from heat until potatoes are evenly browned.  Serve hot.

Chicken Fajita's


This is a Pinterest recipe that I tried tonight and it was a hit!  Served with chipotle guacamole recipe, refried beans, diced tomatoes and warm tortillas.  Super easy!

Ingredients
  • 1 pound chicken breast, sliced into strips
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 Tablespoon oil
  • 2-3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon coriander
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • corn tortillas
  • cheddar cheese, grated (if wanted)
  • sour cream (if wanted)
  • salsa
Instructions
  1. Preheat oven to 375 degrees.
  2. Place chicken, peppers, onion, garlic, and oil in a large mixing bowl.
  3. Mix spices together in a small bowl.
  4. Pour over the chicken mixture and stir to coat well.
  5. Spread the chicken mixture evenly into a 11×9 baking dish.
  6. Bake for 20 minutes, or until the chicken is cooked completely through.
  7. Serve with warm tortillas and all the fixings.

Crash Hot Potatoes by The Pioneer Woman


I saw this recipe by The Pioneer Woman and decided it would be the perfect side for some tri tip that I wanted to grill on Saturday for dinner.  They were so yummy, and easy!!  They did take a little longer than I was hoping to cook/bake but that's because we were all starving and ready to eat.  

Crash Hot Potatoes

Servings: 6
 

Ingredients

  • 12 whole New Potatoes (or Other Small Round Potatoes)
  • 3 Tablespoons Olive Oil
  • Kosher Salt To Taste
  • Black Pepper To Taste
  • Rosemary (or Other Herbs Of Choice) To Taste  *I used dried Parsley

Preparation Instructions

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.


**Note:  We decided next time we would sprinkle some crispy bacon on the top as well. Yum!

Chicken Tortilla Soup

 1 TBS Olive Oil
2-4 cloves garlic
1 Onion
2 large diced carrots
4 Small chicken breasts
2 cans Chicken Broth (gluten and dairy free)
1 Cup Water
2 tsp Cumin
2 tsp Chili Powder
1 can black beans (drained and rinsed)
1 can corn
1 can diced tomatoes
1 can diced green chilis
Salt and pepper to tast

Garnish with Fresh lime, cilantro, tortilla chips and Chipotle Guacamole

Cook Chicken on high heat in oil and garlic.  Add onion and carrots and saute until onion is translucent.  Add remaining ingredients and simmer for 30 minutes.

Chipotle Guacamole

2 small Hass Avacado
2 tsp. fresh lime juice
1/4 cup diced onion
1/2 cup chopped fresh cilantro
1/4 tsp. salt

Add lime juice to diced avocado and smash with fork till desired consistency (I like it a little chunky).  Add diced onion, fresh cilantro and salt.  Great with taco's, burgers, Chicken tortilla soup or by itself with chips!

Teryaki Chicken

3 Boneless Chicken Breast
1/3 cup San J Teryaki Sauce
2 TBS Honey
2 cloves garlic
1 TBS olive oil

Cut chicken breast in strips.  Heat up some olive oil and garlic in pan over high heat.  Put chicken in pan and salt and pepper.  Drizzle Teryaki Sauce on chicken and add honey.  Use tongs to turn chicken until cooked through (approx 6 minutes).  Reduce heat and let the sauce thicken.  Serve with fried rice.

Fried Rice

1lb bacon - cooked crisp
1 green pepper, diced
1 onion, diced
2 cloves garlic
6 eggs
2-4 TBS Soy Sauce (we use GF San J)
1 1/2 cup uncooked rice - cooked.

Cook bacon until nice and crisp.  Remove and put on paper towel to drain.  Remove all but 2 TBS bacon grease.  Saute pepper and onion in grease.  Remove onions and pepper. Scramble eggs with with the garlic until done.  Add in bacon, onions, pepper and rice.  Add 2-4 TBS of soy sauce depending on your taste.  Yum!  Serve with Teryaki Chicken.

Chipotle Guacamole Recipe

Chipotle Guacamole Recipe
Individual sized recipe:
2 Hass Avocados
1/2 of a Jalapeno pepper, seeded, and minced
1/4 of a red onion, finely chopped
2 heaping Tablespoons of Cilantro, finely chopped
1/4 of a lime, juiced
1/4 teaspoon salt

Combine all of the ingredients into a bowl, and mash together until smooth. Add additional lime juice or salt to taste. For extra spicy guacamole, you can leave in the jalepeno seeds!

Banana Crumb Muffins

Last week I made Banana Bread but it was a little bit too moist in the middle.  I've found that when that happens (cornbread, cakes, etc.) I just make them in the muffin tins and it's a perfect match.  So after going to a baby shower this morning where they served banana muffins with a yummy crumb topping I decided to try it with my recipe for breakfast in the morning (we have early church so I like to make muffins the night before).  They turned out super yummy!!

Ingredients:
  • 4 tablespoons butter, melted
  • 1/2 cup sugar or honey
  • 2 eggs, beaten
  • 1 cup banana, mashed
  • 1-3/4 cups Pamela's Baking & Pancake Mix
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup nuts (optional)
Directions:

Beat together butter, sugar or honey, eggs and banana. Add remaining ingredients and mix together. Pour into a large greased loaf pan.
Bake in a preheated 350° oven for 23 minutes for muffins, or until an inserted toothpick comes out clean.

1/2 cup packed brown sugar


  • 1/8 cup all-purpose flour
  • 1/2 t ground cinnamo
  • 1 T butter


  • In a small bowl, mix together brown sugar, flour, and cinnamon. Cut the butter until mixture resembles coarse cornmeal.
  • Sprinkle topping over muffins.

    Recipe Description

    A quick, easy and healthy casserole to throw together when you’re pressed for time!

    Preparation Instructions

    Preheat oven to 350F. In a large bowl, combine all ingredients except for cilantro and mix thoroughly to combine. Make sure the yogurt and cheese are stirred in throughout the entire bowl. Season with salt and pepper if desired. Transfer to an oven-safe dish and top with extra cheese if you would like. Bake for 20-25 minutes, or until heated through. Garnish with chopped cilantro.
    To make this process easier, I always have cooked chicken on hand, and use Uncle Ben’s Ready Rice. If you have those two things, this can be throw together in a matter of minutes! It can also easily be made ahead of time and reheated.

    Ingredients

    • 2 whole Boneless, Skinless Chicken Breasts
    • 4 cups Cooked Brown Rice (I used white because it's what I had on hand
    • ¾ cups Frozen Corn
    • 15 ounces, fluid Can Black Beans, Drained And Rinsed
    • 1 cup sour cream (or Plain Greek Yogurt)
    • 4 ounces, fluid Can Green Chilis
    • ½ cups Salsa
    • 1 cup Low-fat Cheddar Cheese, Plus More For Topping
    • 2 Tablespoons Fresh Cilantro For Garnish

    White Chicken Enchilada's

    This is a new family favorite!  Recipe found here.

    Chicken enchiladas with green chili sour cream sauce
    *These are seriously so so good*
    10 soft taco shells (we used corn)
    2 cups cooked, shredded chicken
    2 cups shredded Monterey Jack cheese
    3 Tbsp. butter
    3 Tbsp. flour (Pamela's GF Baking Mix)
    2 cups chicken broth
    1 cup sour cream
    1 (4 oz) can diced green chillies
    1.  Preheat oven to 350 degrees.  Grease a 9x13 pan
    2. Mix chicken and 1 cup cheese.  Roll up in tortillas and place in pan.
    3. In a sauce pan, melt butter, stir in flour and cook 1 minute.  Add broth and whisk until smooth.  Heat over medium heat until thick and bubbly.  
    4. Stir in sour cream and chilies.  Do not bring to boil, you don't want curdled sour cream.
    5. Pour over enchiladas and top with remaining cheese.
    6. Bake 22 min and then under high broil for 3 min to brown the cheese.
